Do You Know How to Make Damper?

Ingredients:
  • 3 cups self-raising flour
  • a pinch of salt
  • 80g of butter, chilled and cubed
  • ¾ cup water

Utensils:
  • A large bowl
  • An oven
  • Baking tray
  • Non-stick baking paper
  • A round-bladed knife
  • A sharp knife

  1. Preheat the oven to 200C.
  2. Line the baking tray with non-stick baking paper.
  3. Combine the flour and salt in a large bowl.
  4. Rub the butter using your fingertips into the flour until the mixture is like breadcrumbs.
  5. Add the water to the mixture.
  6. Use the round-bladed knife to mix the mixture until it comes together. Add 1-2 tbsp of water if the mixture is dry.
  7. Mix it together with your hands.
  8. Place the dough into a lightly floured surface and knead the dough until it is smooth.
  9. Shape the mixture into a 18cm disc and place it on the tray.
  10. Using the sharp knife, mark 8 lines on top.
  11. Dust the dough with a little bit of flour.
  12. Bake the dough for 30 minutes.

If the damper sounds empty when you tap it on the base, then the damper is ready.
